I always loved the Mexico showcase since I was very young. I love the fountain and the blue lighting around the showcase. I loved the warm feeling of a little village. It always kind of had a Its a Small World kind of feeling to it. This showcase reminds me most of the old Epcot of my childhood. I always had fun trying on hats and looking at all the goodies.

Although La Cava del Tequila is really a new addition relative to my Disney World travel history, it has become a treasure for me. It is something I do every trip. Even when there are so many things I want taste and try at the festivals, I still save space for this cocktail.

The cucumber margarita is absolutely my favorite. I have tried others on the menu, but I would still choose this one every time. I love the cucumber and basil flavors mixed with pineapple and lime flavors. The chili salt flavor the you get from the rimmer just makes the whole drink superb. There is nothing more refreshing on a hot day. That’s why I had to try and make this drink. Overall, I had to make some substitutions along the way, but I ended up with the flavor I wanted.

Here’s what I used:

Camarena Tequila, Cucumber, Fresh Basil, Pineapple juice, Lime Juice, Tres Agave Margarita Mix, and Trajin Rimmer

I started by preparing the carmelized pineapple juice listed on the menu. I put pineapple juice in a sauce pan and let it simmer to reduce it just a bit. I only reduced it until the fluid was about 1/4 less than what I placed in the pan. After that, I turned off the heat and placed to the pan to the side to allow for it to cool.

Next, place finely minced basil and peeled cucumber cut into slices that are quartered into a large mixer or shaker. I then used a large wooden spoon to muddle the ingredients.

After that, I added 6oz of tequila. The menu says Mezcal is also added, but I couldn’t really find it in my local liquor store. So I just omitted it from the recipe.

Next, I added 4oz of Tres Agaves Margirita mix.

Then I added just a splash of lime juice, about 1 tablespoon.

Next, I added about 8 oz of ice.

Then I added the carmalized pinapple juice about 7-8oz. I closed up the shaker and shaked it very well, melting a majority of the ice.

After that I started getting the glasses ready. I used the Tajin Rimmer. I found it on Amazon.com this time, but I have seen in the normal grocery store in the past. Just wet the rim of the glass and dip.

Next, add some fresh ice to your glasses and pour the margarita in. Make sure to get some of the muddled basil and cucumber in the glass.
